Air Fryer Chicken Parm

2 lb chicken breast tenders

1/2 cup soy milk

Panko italian bread crumbs (sprouts brand are my favorite)

Spray avocado oil

1 jar Rao's marinara sauce

1 lb pasta

Grated parmesan cheese (optional)


Season the chicken with salt and pepper. Place the soy milk in a shallow bowl and the bread crumbs in a second shallow bowl. Dip the chicken in the soy milk and then coat with the bread crumbs. Spray the breaded chicken with avocado oil on both sides and place in the air fryer basket. Air fry on 400 degrees for 10 minutes, or until golden brown and the internal tempreature is 165. Meanwhile, while the chicken is cooking, cook your pasta according to package directions. Pour the jar of marinara sauce into a sauce pan and blend with an immersion blender for a smoother consistency, if desired. Once the pasta is al dente, scoop it into the marinra sauce to finish cooking together. Plate your pasta and top with grated parmesan (unless opting for dairy free) and top the pasta with your crispy chicken.
