2 lb ground beef
1 15 oz can tomato sauce
corn tortillas
avocado oil
toppings: pinto beans, shredded lettuce, grated cheese
Heat a saute pan over medium heat. Add in ground beef and brown, mashing into small pieces as it cooks. Once cooked through, drain in a collander. Wipe out the pan and add the meat back in. Pour over the tomato sauce and season liberally with salt and pepper. In a cast iron skillet, heat 4 inches of avocado oil. Tear off a small piece of tortilla and put it in the oil to test - once it bubbles the oil is ready. Cook the tortillas in the oil, forming into the shape on a taco and flipping from side to side until golden brown around the edges. Drain on paper towels. Fill the taco shell with desired toppings. We like to use mashed pinto beans, meat, shredded cheese, shredded lettuce, and hot sauce!
