Ina Garten's Pizza Dough

1 1/4 cups warm water (100 to 110 degrees)

2 packages active dry yeast

1 Tbsp honey

3 Tbsp olive oil

4 cups flour, divided

2 tsp salt


Combine the warm water, yeast, honey, and olive oil in the bowl of an electric mixer fitted with a dough hook attachment. Cover and let sit for 5 minutes, until yeast gets bubbly. Add in 3 cups of flour and salt and mix on low speed until combined. If the dough is sticky, slowly add the fourth cup until the dough is not sticking to the bowl. When dough is ready, turn onto a floured board and knead by hand for a 2-3 minutes until the dough bounces back when you press it. It should be smooth and elastic. Drizzle your mixer bowl with olive oil and place the dough back in the bowl. Cover with a towel and set aside to rise at room remperature for 30 minutes, until doubled in size. Divide the dough into 4 equal parts and cover with a towel for 10 minutes to rest. Stretch by hand into a 10 inch circle on a well floured surface. Top with sauce and your favorite pizza toppings. If you have a pizza oven, heat to around 800 degrees. Flour your pizza peel and transfer pizza into the pizza oven, watching and turning as it browns. Once brown and bubbly, remove and enjoy! If you're makig the pizza in a conventional oven, heat to 500 degrees and bake for about 12 minutes until the dough is crisp and the cheese is melted.
