Vegan Protein Waffles

1/4 cup ground flax seeds

1/2 cup water

3/12 cups soy milk

2 Tbsp apple cider vinegar

3 cups flour

2 scoops vanilla protein powder

1 Tbsp baking powder

1 tsp salt

1/3 cup granulated sugar

1/2 cup avocado oil

2 tsp vanilla extract


In a small bowl combine the grond flax seeds and water and set aside. In a separate measuring cup, combine the soy milk and apple cider vinegar. In a large bowl whisk together the flour, protein powder, baking powder, salt, and sugar. Pour in the flax seed mixture, soy milk mixture, oil, and vanilla. Stir until just combined. Spray your heated waffle iron with avocado oil and cook to until golden brown. Leftovers can be stored in the refrigerator for up to 5 days and taste best re-heated in the toaster!
