
Double Chocolate Avocado Blender Muffins

1 cup oat milk
2/3 cup apple sauce
1 medium avocado, about 1/2 cup mashed
1/2 cup maple syrup
2 tsp vanilla
1 tsp apple cider vinegar
1/2 cup cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup chickpea flour
1 cup dark chocolate chips
Preheat oven to 350. Combine all ingredients (except for chocolate chips) in the blender in the order listed. Blend until well combined. Fold in 3/4 cup chocolate chips. Scoop into muffin tin and top with remaining 1/4 cup chocolate chips. Bake for 17 minutes. Cool for 10 minutes in the tin and then remove to cooling rack.
