This recipe is SO good! Giada uses raisins as her mix in, but I sub for chocolate chips (because...... duh)
1 cup all-purpose flour
2/3 cup old-fashioned oats
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon ground allspice
3/4 cup raw sugar, plus additional for sprinkling
1/2 cup canned pumpkin puree
1/3 cup avocado oil
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
1/2 cup dark chocolate chips
Preheat oven to 350 and line a cookie sheet with parchment paper. In a medium bowl, whisk together flour, oats, cinnamon, baking soda, salt, and all spice. In a large bowl whisk together sugar, pumpkin, oil, maple syrup, and vanilla. Fold the dry ingredients into the wet and then fold in the chocolate chips. Scoop cookies onto cookie sheet using a small ice cream scoop. Bake for 12 minutes. Let cool on cookie sheet for a couple of minutes before moving to a cooling rack.
