This recipe by Half Baked Harvest calls for artichokes, olives, feta cheese and dill, but I personally leave those ingredients out. Feel free to add them back in!
2 Tbsp extra virgin olive oil
1 1/2 ponds boneless skinless chicken thighs
salt and pepper
2 Tbsp salted butter
4 cloves garlic, minced
1 cup dry orzo
1 cup dry white wine
1 1/4 cup chicken broth
zest and juice of 1 lemon
Preheat the oven to 375. In a large pan, heat the olive oil. Sprinkle the chicken with salt and pepper and brown for 3-5 minutes per side. Remove chicken from pan. Melt butter in pan and add minced garlic. Cook for 1 minute. Add in the orzo and toast for 1 minute. Add the white, chicken stock, lemon juice and zest and bring to a boil. Add the chicken back into the pan and roast in the oven for about 15 minutes, or until the liquid is absorbed into the orzo and the internal temperature of the chicken is 165 degrees.
