Texas Sheet Cake

Cake:

2 cups sugar

2 cups flour

1/2 tsp salt

2 sticks butter

1 cup water

4 Tbsp cocoa powder

2 eggs

1 tsp baking soda

1 tsp vanilla extract

1/2 cup whole milk

1 Tbsp white vinegar

Frosting:

1 stick butter

6 Tbsp milk

3 1/4 cup powdered sugar

1 Tbsp vanilla

4 Tbsp chocolate chips


Preheat the oven to 400 degree. Whisk together the sugar, flour, and salt in a large bowl. Put the water and butter in a small sauce pan and bring to a boil. Once boiling, remove from heat and add in the cocoa powder and whisk to combine. In a glass measuring cup, combine the milk, eggs, baking soda, vanilla, and vinegar. Pour the hot cocoa mixture over the flour mixture and stir until combined. Very slowly add in the milk mixture, stirring between each addition. Spray a sheet pan with oil and pour the cake batter in the pan. Hit a few times on the counter to remove air bubbles. Bake in the oven for about 12 minutes. Remove and cool while you make the frosting. To make the frosting, place the butter and milk in your small sauce pan to melt butter and bring to a simmer. Once simmering, remove from heat and add in the chocolate chips. Whisk to melt chocolate. Combine the chocolate mixture with the powdered sugar and whisk until smooth. Add in the vanilla extract and whisk again. Pour the frosting over the slightly cooled cake and spread evenly over the cake with a rubber spatula. Once the cake is evenly iced, lick the spatula.... trust me...
