
Classic Mac n cheese

3/4 pound pasta
2 cups whole milk
1/4 cup butter
1/4 cup flour
1/2 tsp salt
1 1/2 cup extra sharp cheddar cheese
1/2 cup pecorino romano or parmesan cheese
Italian seasoned bread crumbs
Bring a pot of water to a boil. Once boiling, season with salt and add in pasta. Cook until al dente, 1-2 minutes less than the package suggests. Meanwhile, melt the butter in a heavy bottom sauce pan. Pour milk in a measuring cup and warm in the microwave. Once butter is melted, pour in the flour and whisk, cooking for 1-2 minutes. Slowly pour in the milk while whisking continually. Add in 1/2 tsp salt. Switch to a rubber spatula and stir continuously until the mixture is thickened and coats the back fo the spatula. Turn off head and add in cheeses. Stir until cheese is melted. Add in the cooked pasta and stir to combine. Serve straight from the pot, or pour mac and cheese into a baking dish. Sprinkle breadcrumbs over the top, drizzle with olive oil, and bake in 425 degree oven for 12-15 minutes, until the breadcrumbs are golden brown and the mixture is bubbling around the sides.
